Acorn Squash

There has been many posts lately about acorn squash and that makes me SO happy!  I love acorn squash (almost as much as spaghetti squash!).  The way I prepare it is very similar to many others...

Split the squash in half and scoop out the seeds.  Place the squash in a baking dish that is filled about an inch full of water.  Sprinkle the squash with kosher salt.  In the centers of each squash put 2 tablespoons butter, 1 heaping tablespoon brown sugar, 2 tablespoons chopped pecans (or your nut of choice).  Put the squash in a preheated 400 degree oven.  Cover them for the first 30 minutes and then uncovered for the last 30 minutes.  Check them and if the flesh of the squash is soft, they are done.  If not, let it bake a bit longer.

That is it.  Super simple and delicious.  If you haven't checked out all of the lovely squash that is out there this time of year, do it now!  You won't be sorry.

I found out this year that I love squash too, in all it's forms. I hated it as a child. There are so many fun shapes and flavors and this looks perfect. Your photo is beautiful. I love the light. Tasty!

This is my favorite way to eat acorn squash. Butter, brown sugar and nuts, does it get much better? Yum!
