TWD: Mixed Berry Cobbler

Beth chose this weeks recipe and I have to say I was excited! I love cobblers, crisps, and crumbles. I have great memories from high school making "Cherry Peach Stuff" with a friend. Basically it was fresh peaches, cherry pie filling, and a crisp-like topping. I would put a splash of milk in a bowl with it and was in heaven. I still make it from time to time and it really reminds me of summer.

I was a little nervous about being overwhelmed with fruit cobbler, so I tweaked the serving sizes. I only had one bag of mixed berries in my freezer, so I halved the recipe...sort of. One bag of fruit filled four ramekins. I halved the cobbler topping, but didn't use it all. And, instead of rolling it out, I just sprinkled the crumbles on top of the fruit and sort of patted them down. I finished off each ramekin with a generous sprinkle of cinnamon sugar.

These were really delicious. I was pleased with the decision to just sprinkle the cobbler topping. It was fluffy and blended perfectly with the berries. The lemon zest made a big difference and I would never make this without the cinnamon sugar! I love the juices dripping down the side of the ramekin - so tasty looking! Sprinkling the biscuit topping sounds like a great idea too.

That looks delicious! I don't think rolling the dough was strictly necessary. It's supposed to be a little rustic.

Those are adorable little cobblers! And they solve the problem of one large dish, where the filling all runs out from under the topping when you dish out the first serving.
