Even though I am not a vegetarian, I still make a lot of vegetarian choices. I think I am just used to eating this way now. Unless it is chicken breast or tuna fish, you will be hard pressed to find meat in my house. Occasionally I will buy some, but I am so unsure how to make it, I shy away from buying it.
This salad is SO simple, it is almost embarrassing, but it is so tasty. Fresh tasting and the dressing is so simple, the flavors of the veggies can really shine through. And the capers give it a great punch of salty flavor. This salad is even better if you give it overnight to let all of the flavors meld together.
The drink I chose is something my grandma made me when I was little. It is fresh tasting and a perfect accompaniment to this salad. This is a great snack this time of year. A nice change of pace from all of the heavy eating of the last two months. Enjoy and join the party!
3 cucumbers, peeled, seeded, and chopped
2 yellow bell peppers, chopped
1 pint grape tomatoes, halved
1 red onion, chopped
2 t dill weed
1 jar capers, drained
1/4 c cider vinegar
1/4 c olive oil
Chop all the veggies and combine them in a bowl. Add capers, dill weed, cider vinegar, and olive oil. Mix to coat all ingredients.
Grapefruit Spritzer
Mix equal parts white grapefruit juice and tonic water. Stir and enjoy chilled.
